Light spritz, low alcohol, loads of fun.
Post-fermentation Russian River Pinot Noir skins were pressed dry and rehydrated with water. Fermentation was aided by organic local honey and a saignée of Alexander Valley Zinfandel. Drained off skins and bottled at 1.3 brix. Hand-riddled and disgorged in December 2021. 6.5% ABV.
This is a completely natural wine, fermented in bottle on ambient yeast. Some sediment is normal and completely harmless. I recommend you leave the bottle upright for a day before serving, and serve chilled.
